La Quercia
Prosciutto Americano

Named by Bon Appetit Magazine as "Food Artisans of the Year", Herb and Kathy Eckhouse in many senses define contemporary culinary pioneering. Using the finest domestic pigs and a well developed recipe, Herb, Kathy, and the staff at Iowa's La Quercia produce this domestic prosciutto that holds it own next to the greats from Parma. Hailed by famed food critic Jeffrey Steingarten as "the best American or imported prosciutto [he's] ever tasted," this nitrate-free product is cured using only sun dried sea salt. Its flavors are subtle, nuanced, and impressive--sweet, salty, slightly nutty, and deliciously meaty. Use it as you would the finest from Parma: on your antipasto plates, in your favorite sandwich, or by itself with some crusty bread.

Creminelli Fine Meats!

I tasted these artisanal salamis at a show and I knew we had to have them!  Made in Utah by Cristiano Creminelli, these salamis are made using traditional Italian methods that have been passed down from generation to generation in his family.  We are currently featuring two styles:

Salami Cacciatore -- Hunter's Salami

Salami Tartufo -- Truffle Salami -- Too good to be true!

The Produce Station Features
Miller Amish Country Poultry

Miller Amish Poultry chicks are hatched at their own hatchery and placed primarily on Amish family farms.  The birds are raised inside naturally ventilated, curtain sided, houses and are free to roam on open floors.  They are fed an all-vegetable diet and are hormone and antibiotic free.  Antibiotic free -Miller chickens are raised on all vegetable feed that is ground at their feed mill from corn and soybeans.  No antibiotics are added.  Labels can be confusing - with terms like "free-range" on the label it does not mean that it is antibiotic free.  There is no requirement that free-range chickens be antibiotic free.

All Vegetable fed - Miller Amish Country Poultry feed is a mixture of corn, soybeans, minerals, salt and vitamins that is mixed at their own feed mill and there are no animal by products, animal fats or coloring added, never.
